Cacao Nibs are roasted cocoa beans separated from their husks and roughly chopped. Our nibs come from a careful selection of ripened, well fermented cocoa beans brought from high-quality plantations in Venezuela. The beans go through a cleaner, and then a roaster, which brings out the chocolate flavor. A winnower machine then crushes the beans and removes their thin shells.
The resulting cacao nibs are then usually turned into cocoa powder, combined with sugar and produced into chocolate you buy in the store. But without further processing and added sugar, they are much like nuts with an earthy, slightly bittersweet flavor, and can be eaten by the hand full or sprinkled on, well, almost anything. You might also try them as a substitute for chocolate chips or nuts in your favorite recipe.
